Is there a way to save default setting so as not to have to re-create every time a new sketch is created ?

This would be a nice improvement, I'll add it to the requested features list!

As a temporary workaround, you could create an empty online sketch with the settings that you would like to use, and use it as a template:
whenever you want to create a new sketch, you first open the template sketch and then immediately save it again as an online sketch which you then edit further.

the workaround "kinda" works, saves the paper size and grid, but stroke & fill get reset.
