Is there any way to select just part of a line (perhaps drawn as part of a rectangle or a series of connected lines) and erase that part? For example, if I drew a rectangle to represent a room and then wanted to erase part of one side to indicate an opening (a door or a window), I can’t figure out how to do that.

I can't make it work. It looks SO simple on your video but on my MacAir I never see the large dots that show where the line has crossed and will be cut. I've selected the box, it begins to blink, then I select "knife" and draw a box around the section to be cut out and hit "enter". Nothing happens.
